- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 red bell peppers, cut into chunks
- 1 yellow onion, cut into wedges
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 2 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- Juice of 2 limes
- Fresh cilantro, chopped (optional for garnish)
Instructions
- Start by preparing your marinade. In a medium bowl, combine olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, and lime juice. Whisk until well combined.
- Add the chicken pieces and pour your marinade over them. Toss well for even coating.
- Soak your skewers in water for about 30 minutes if using wooden ones.
- Preheat your grill to a medium-high heat, about 400°F.
- Assemble your skewers by alternating the marinated chicken, red bell peppers, onion wedges, and cherry tomatoes.
- Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until cooked through (internal temperature of 165°F).
- Remove the skewers from the grill and allow them to rest for a few minutes.
- Garnish with freshly chopped cilantro before serving.
Notes
For healthier alternatives, use skinless chicken breast, avocado oil, or firm tofu as a substitute. Serve with lime wedges and enjoy.
