Ingredients

  • 3 cups shredded zucchini (about 2 medium zucchinis)
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1 cup chopped nuts (walnuts or pecans, optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  2. Combine softened butter, granulated sugar, and brown sugar in a large mixing bowl. Use an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and mix until well blended.
  4. Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl. Gradually add the dry to the wet ingredients, mixing on low speed until just combined.
  5. Fold in the shredded zucchini and nuts using a spatula.
  6. Pour the batter into the prepared baking dish, spreading it evenly.
  7. Bake for 40-45 minutes, or until a toothpick comes out clean. The edges should be golden-brown.
  8. Allow to cool in the pan for at least 15 minutes before transferring to a wire rack. Dust with powdered sugar if desired before cutting into bars.

Notes

For gluten-free, use gluten-free all-purpose blend. For vegan, substitute eggs with flax eggs and use applesauce instead of butter.
