- 4 large chicken thighs (bone-in, skin-on)
- 1/4 cup olive oil
- Zest and juice of 2 large lemons
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon honey (optional)
Instructions
- Start by preparing your marinade. In a large bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, smoked paprika, salt, and pepper. Add honey if desired and whisk until nicely blended.
- Add your chicken thighs to the marinade, ensuring they’re well-coated. Cover the bowl and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat. Take the chicken out of the fridge and allow it to come to room temperature for about 15–20 minutes.
- Grease the grill grates and place the chicken thighs on the grill, skin-side down. Grill for 7–10 minutes, then flip them and continue grilling for another 15–20 minutes until cooked through.
- Remove the chicken from the grill and let it rest for about 5 minutes before serving.
Notes
For deeper flavor, marinate overnight. Chicken thighs are juicier than breasts and less likely to dry out.
