- 2 cups shredded cooked chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
- 8 small flour tortillas
- 1 cup sour cream (or Greek yogurt)
- 1/2 cup chopped onions (optional)
- 1/4 cup chopped cilantro (optional)
- Olive oil (for cooking)
- Spices: cumin, garlic powder, salt, and pepper (to taste)
Instructions
- Preheat your oven to 350°F (175°C).
- Pour a little olive oil into a large pan and sauté the chopped onions until they become translucent.
- Mix in the shredded chicken and add half of the enchilada sauce, cumin, garlic powder, salt, and pepper. Stir well until everything is heated through.
- Fill each tortilla with a generous amount of the chicken mixture.
- Roll each tortilla tightly and place them seam-side down in a greased casserole dish.
- Pour the remaining enchilada sauce over the top and sprinkle the shredded cheese generously.
- Bake in the preheated oven for about 20 minutes, until the cheese is melted and bubbly.
- Top with sour cream and chopped cilantro before serving.
Notes
For a healthier twist, use whole wheat tortillas and Greek yogurt instead of sour cream.
