  • 1 bottle (750 ml) of high-proof vodka (or grain alcohol)
  • 4 cups granulated sugar
  • 4 cups water

Instructions

  1. Wash your lemons thoroughly and pat them dry.
  2. Zest the lemons using a microplane or a vegetable peeler, avoiding the white pith.
  3. Pour the vodka over the lemon zest in a large jar and seal tightly.
  4. Store in a dark, cool place for one week, shaking gently every few days.
  5. Combine the sugar and water in a saucepan over medium heat to make simple syrup until sugar dissolves.
  6. Strain the lemon infusion to remove the zest once the syrup is cooled.
  7. Combine the infused vodka with the simple syrup in a clean bottle.
  8. Let sit for another 2-4 days for the best flavor before storing in the freezer.
