Instructions
- Start by collecting those glorious turkey drippings from the roasting pan. Pour them into a measuring cup and let them settle. Once they’ve settled, skim off the excess fat that rises to the top. You’ll want to have about 2 tablespoons of fat left in the pan.
- Place your roasting pan on the stove over medium heat. Throw in the 2 tablespoons of unsalted butter and let it melt into the drippings, stirring it all together.
- Once the butter is melted, whisk in the 2 tablespoons of all-purpose flour and cook for about 2 minutes.
- Gradually add in the 2 cups of turkey stock while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer and allow it to thicken for about 5-7 minutes.
- As your gravy thickens, taste it and season with salt and pepper according to your preference. Add onion or garlic powder for extra flavor, if desired.
- If using fresh herbs, stir them in now for an aromatic finish.
- Once your gravy reaches the desired consistency, remove it from heat and let it sit for a moment to thicken further.
