Description

A hearty turkey casserole filled with tender turkey, creamy goodness, and a medley of vegetables, perfect for using leftovers and ideal for weeknight meals.


Ingredients

  • 3 cups cooked turkey, shredded or diced
  • 2 cups cooked rice (or quinoa)
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 cup carrots, sliced
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 2 tablespoons olive oil (or butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cooked turkey, cooked rice, broccoli, green beans, carrots, and cream of mushroom soup in a large mixing bowl.
  3. Pour in the milk and sprinkle the garlic powder, onion powder, salt, and pepper. Mix thoroughly.
  4. Spread the turkey mixture evenly in a greased 9×13-inch baking dish.
  5. Sprinkle shredded cheddar cheese over the top.
  6. Optionally, sprinkle breadcrumbs over the cheese.
  7. Bake in the preheated oven for about 30 minutes, or until the cheese is melted and bubbly.
