- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/2 teaspoon salt
- 1 cup chopped nuts (optional, walnuts or pecans work well)
- 1/2 cup chocolate chips (optional, for a touch of sweetness)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- Combine the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract in a large mixing bowl. Whisk until smooth.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl. Gradually add to the wet mixture, stirring until just combined.
- Fold in nuts or chocolate chips if using.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Remove from the oven and let it cool completely on a wire rack.
- Slice into squares or rectangles and serve warm or at room temperature.
