Ingredients

  • 3 cups cooked chicken, shredded
  • 2 cups cooked rice or quinoa
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream or Greek yogurt
  • 1 cup mixed vegetables (peas, carrots, green beans)
  • 1 cup shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup French fried onions
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken, cooked rice (or quinoa), cream of chicken soup, sour cream, and mixed vegetables in a large mixing bowl.
  3. Season with Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  4. Transfer the mixture into a greased 9×13-inch baking dish.
  5. Sprinkle shredded cheddar cheese on top.
  6. Bake in the preheated oven for about 25-30 minutes.
  7. Pull it out and sprinkle French fried onions on top in the last 5 minutes of baking.
  8. Let it rest for a few minutes before serving and garnish with fresh parsley or thyme.

Notes

This casserole can be made ahead of time and stored in the fridge before baking. Adjust baking time as needed.
