- 1 lb chicken breast, sliced thinly
- 4 cups green cabbage, shredded
- 1 red bell pepper, sliced
- 2 carrots, julienned
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon fish sauce (optional)
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
- 2 tablespoons cooking oil (vegetable or canola)
- Salt and pepper to taste
- Optional: crushed red pepper flakes for a spicy kick
Instructions
- Start by heating a large skillet or wok over medium-high heat. Add the cooking oil. Once it shimmers, toss in the chicken pieces. Sauté for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through.
- Once the chicken is fully cooked, push it to one side of the skillet. Add the minced garlic and ginger to the vacant side and sauté them for about a minute until fragrant.
- Now, it’s time to add the veggies! Toss in the cabbage, bell pepper, carrots, and green onions. Stir everything together so that the chicken and vegetables cook uniformly. Sauté this mixture for about 5 minutes until the cabbage starts to wilt but is still crunchy.
- Pour in the soy sauce, fish sauce (if using), lime juice, and sesame oil. Stir well, allowing the flavors to meld together. Season with salt, pepper, and red pepper flakes if you love a little heat. Cook for another minute or two.
- Take a moment to taste your stir fry and adjust the seasoning if necessary.
- Remove the skillet from the heat and serve your stir fry warm over a bed of rice, or enjoy it just as it is!
Notes
For a healthier alternative, use skinless chicken thighs or swap in tofu for a vegetarian option.
