- 1 pound ground beef or turkey (or a meat alternative)
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 packet taco seasoning (or homemade blend)
- 4 cups beef or chicken broth
- 1 cup diced onion
- 1 cup diced bell peppers (any color)
- 2 cloves garlic, minced
- Optional toppings: Shredded cheese, sour cream or Greek yogurt, sliced green onions, fresh cilantro, tortilla chips or strips
Instructions
- Start by heating a large pot over medium heat. Once hot, add your ground beef or turkey. Cook until browned, breaking it up with a spatula.
- Incorporate the diced onions, bell peppers, and minced garlic into the pot. Sauté for about 3-4 minutes.
- Next, sprinkle in the taco seasoning. Stir well to coat the meat and vegetables.
- Pour in the diced tomatoes, black beans, corn, and broth. Bring the mixture to a simmer.
- Once simmering, lower the heat and let it cook for about 20 minutes, stirring occasionally.
- After 20 minutes, taste your taco soup and adjust seasoning if needed.
- Serve the soup piping hot with your choice of toppings.
Notes
For a vegetarian option, substitute ground meat with lentils or textured vegetable protein. Store leftovers in an airtight container for 3-4 days, or freeze for up to 3 months.
