Instructions
- Begin by thoroughly washing your beets to remove any dirt.
- Cook the beets until tender, either by roasting at 400°F for 50-60 minutes or steaming for 30-40 minutes.
- While the beets are cooling, prepare the pickling brine by combining apple cider vinegar, water, sugar, salt, peppercorns, and mustard seeds in a saucepan and heating until the sugar dissolves.
- Once the beets have cooled enough to handle, peel off the skins.
- Slice the beets into rounds or cubes.
