  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows (optional)
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup brown sugar
  • 2 tablespoons butter, melted

Instructions

  1. Start by preheating your oven to 350°F (175°C). Peel and chop the sweet potatoes into equal pieces for even cooking. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Once the sweet potatoes are cool enough to handle, mash them in a large bowl until smooth. Add in the granulated sugar, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined and creamy.
  3. Transfer the sweet potato mixture to a greased baking dish, smoothing out the top with a spatula to ensure an even layer.
  4. In a separate bowl, mix the topping ingredients: mini marshmallows, chopped nuts, brown sugar, and melted butter. Sprinkle this mixture over the sweet potato base.
  5. Bake in the preheated oven for approximately 30 minutes. The casserole should be bubbly, and the toppings should have a beautiful golden-brown color.
  6. Let it sit for about 10 minutes before serving, allowing the flavors to meld beautifully.

Notes
