A classic comfort dish that blends velvety sweet potatoes with cinnamon and nutmeg, topped with toasted marshmallows.

- 4 large sweet potatoes (about 2 pounds), peeled and cubed
- 1/2 cup brown sugar (light or dark)
- 1/2 cup milk (whole or any non-dairy alternative)
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 cups mini marshmallows
Instructions
- Start by preheating your oven to 350°F (175°C). Prepare a 9×13-inch baking dish by greasing it lightly with butter or cooking spray to prevent sticking.
- Bring a large pot of salted water to a boil. Add your cubed sweet potatoes and cook until they are tender, about 15-20 minutes. You can test doneness by piercing them with a fork; they should be soft and easy to mash.
- Drain the sweet potatoes and transfer them to a large mixing bowl. Mash them until smooth using a potato masher or an electric mixer for a creamier texture.
- To the mashed sweet potatoes, add the brown sugar, milk, softened butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well until everything is combined and smooth. Taste and adjust the sweetness or spices to your liking.
- Pour the sweet potato mixture into the prepared baking dish. Use a spatula to spread it evenly across the dish.
- Bake the casserole in the preheated oven for about 25 minutes, allowing it to set and develop a delicious crust.
- After 25 minutes, remove the casserole from the oven and sprinkle the mini marshmallows evenly on top.
- Return the casserole to the oven and bake for an additional 5-10 minutes or until the marshmallows are golden and toasted. Keep a close eye so they don’t burn!
Notes
For a vegan version, swap the butter with coconut oil and use a flaxseed egg as a substitute for the eggs. To reduce sugar, consider using coconut sugar or a sugar-free sweetener.
