Description
A warm and comforting sweet potato casserole, perfect for holidays or as a delicious side dish.
Ingredients
Scale
- 4 large sweet potatoes, peeled and cubed
- 1/2 cup granulated sugar
- 1/2 cup milk (or almond/oat milk)
- 1/2 cup unsalted butter (melted; or coconut oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

- 1/4 teaspoon salt
- 1 cup mini marshmallows (optional)
- 1/2 cup pecans or walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C). Boil the sweet potatoes in salted water until tender, about 15-20 minutes.
- Drain the sweet potatoes and let them cool slightly. Transfer them to a mixing bowl and mash until smooth.
- Mix in the sugar, melted butter, milk, eggs, vanilla, cinnamon, nutmeg, and salt until well combined.
- Spread the mixture into a greased 9×13-inch baking dish, ensuring it’s even.
- Cover the casserole with mini marshmallows if desired, or skip for less sweetness.
- Bake for 30-35 minutes, until bubbly and slightly golden brown.
Notes
Consider customizing with healthier alternatives like coconut sugar or plant-based milk. Taste before baking to adjust spices and sweetness to your liking.
