Ingredients

- 2 cups all-purpose flour
- 1 cup mashed sweet potatoes (about 1 medium sweet potato)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1/4 cup cold unsalted butter, cubed
- 1/2 cup milk (or buttermilk)
- 1 teaspoon vanilla extract (optional)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Combine the flour, baking powder, salt, and sugar in a mixing bowl.
- Add the cold butter cubes and work them into the flour mixture until it resembles coarse crumbs.
- Mix the mashed sweet potatoes, milk, and vanilla extract in another bowl until well blended.
- Fold the wet mixture into the flour mixture gently until just combined.
- Knead the dough on a floured surface for about 5-6 times.
- Roll the dough to about 1 inch thick and cut out biscuits.
- Bake for 20-25 minutes or until golden brown.
- Cool slightly before serving.
