- 2 ribeye or sirloin steaks (about 1 inch thick)
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
- Optional: Fresh herbs like thyme or rosemary for seasoning
- 1 tablespoon whole black peppercorns (or mixed peppercorns)
- 1 tablespoon butter
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- Optional: A splash of sparkling grape juice or cranberry juice
Instructions
- Start by taking your steaks out of the fridge and letting them rest for 15-20 minutes.
- Season both sides generously with salt and pepper, and rub in fresh herbs if desired.
- Heat a skillet over medium-high heat with olive oil or butter until hot.
- Carefully place the steaks in the skillet and sear for 4-5 minutes on each side for medium-rare.
- Remove the steaks and let them rest on a cutting board.
- In the same skillet, add butter and whole peppercorns, and sauté for about a minute.
- Pour in the heavy cream and bring to a boil, then lower the heat and mix in Dijon mustard and Worcestershire sauce.
- Taste the sauce and adjust seasoning if necessary.
- Slice the steak against the grain, drizzle with the sauce, and serve.
