Description

A delightful fusion of airy focaccia and classic pizza, topped with your favorite ingredients.


Ingredients

  • 3 cups all-purpose flour (or bread flour)
  • 1 ½ cups water (room temperature)
  • 1 cup active sourdough starter
  • 2 teaspoons salt
  • 2 tablespoons olive oil (plus more for drizzling)
  • 1 cup shredded mozzarella cheese
  • ½ cup sliced bell peppers
  • ½ cup sliced red onions
  • 1 cup cherry tomatoes (halved)
  • ½ cup black olives
  • Optional: Grated Parmesan cheese for garnish
  • Optional: Fresh arugula or basil for garnish

Instructions

  1. Combine the all-purpose flour and salt in a large mixing bowl. In a separate bowl, mix the active sourdough starter with the room temperature water and stir until combined. Gradually add this mixture to the flour while mixing until a shaggy dough forms.
  2. Let your dough rest covered for about 30 minutes to improve texture.
  3. Add 2 tablespoons of olive oil to the dough and knead for 5–7 minutes until smooth and elastic.
  4. Place the dough back into the bowl, cover it, and allow it to ferment in a warm area for 4–6 hours, until doubled in size.
  5. Coat a large baking sheet with olive oil and gently transfer the dough onto it, spreading it to fit the shape of the baking sheet.
  6. Preheat your oven to 425°F (220°C). Create dimples all over the surface of the dough, drizzle with more olive oil, and sprinkle with coarse salt.
  7. Add your toppings starting with mozzarella cheese, followed by bell peppers, onions, cherry tomatoes, and olives.
  8. Bake for 25–30 minutes or until golden brown and crispy.
  9. Remove from the oven, let cool briefly, garnish with arugula or basil, slice, and enjoy!
