Description

Ingredients

  • 2 tablespoons granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup buttermilk (or milk with 1 teaspoon lemon juice)
  • 1 tablespoon melted butter
  • 1/4 cup pumpkin puree
  • 2 tablespoons brown sugar (for filling)
  • 1 teaspoon ground cinnamon (for filling)
  • 1 tablespoon melted butter (for filling)
  • Optional: chopped pecans or walnuts
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
  3. Mix the buttermilk, melted butter, and pumpkin puree in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and combine until just moistened.
  5. Knead the dough gently for about 1 minute on a lightly floured surface until it forms a soft ball.
  6. Roll the dough out into a rectangle, about 1/4 inch thick, and brush with melted butter.
  7. Sprinkle the brown sugar, cinnamon, and optional nuts evenly over the top.
  8. Roll tightly from one long side and pinch the edges to seal.
  9. Cut the cylinder into 4-6 even pieces and place them in a greased baking dish.
  10. Bake for 18-20 minutes until golden brown.
  11. Make the glaze by whisking together the powdered sugar, milk, and vanilla until smooth.
  12. Drizzle the glaze over the warm rolls once they cool slightly.

Notes

For a gluten-free option, use a gluten-free baking blend. Substitute Greek yogurt for buttermilk for added protein. To make them vegan, replace butter with coconut oil and use plant-based milk.
