- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn (fresh, frozen, or canned)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (like cheddar or Monterey Jack)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: sour cream, green onions, or avocado
Instructions
- Begin by browning the ground beef in a skillet over medium heat. Drain excess grease once it’s fully cooked.
- Combine the browned beef with drained black beans, kidney beans, diced tomatoes, corn, diced onion, minced garlic, chili powder, cumin, salt, and pepper in a slow cooker. Stir well.
- Cover the slow cooker and set to low for 6-8 hours or high for 3-4 hours. During the last 30 minutes, sprinkle shredded cheese on top.
- Serve the cowboy casserole hot, garnished with sour cream, chopped green onions, or avocado slices.
