- 8 lasagna noodles (whole wheat or gluten-free)
- 1 cup ricotta cheese (part-skim)
- 1 cup mozzarella cheese (shredded)
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach (or kale)
- 2 cups marinara sauce (low-sugar)
- 1 egg (optional for binding)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves (for garnish)
Instructions
- Start by preheating your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella, Parmesan, spinach, egg (if using), Italian seasoning, salt, and pepper.
- Spread a thin layer of marinara sauce at the bottom of your baking dish.
- Lay a noodle on a flat surface, and spread a generous amount of the cheese mixture evenly across the noodle.
- Once all rolls are in the dish, pour the remaining marinara sauce over the top.
- Cover the baking dish with aluminum foil and bake for about 20 minutes, then remove the foil and bake for an additional 10 minutes.
Notes
You can prep the noodles ahead of time and use pre-packaged marinara sauce to save time.
