Description

A quick and easy recipe for delicious fajitas made all on one pan, perfect for busy weeknights.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts or thighs, sliced into thin strips
  • 3 bell peppers, sliced (any colors)
  • 1 large yellow or red onion, sliced
  • 2 tablespoons olive oil or avocado oil
  • 1 lime (half for cooking, half for serving)
  • Flour or corn tortillas, warmed
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt (adjust to taste)
  • 1/4 to 1/2 teaspoon black pepper

Instructions

  1. Heat the oven to 425°F.
  2. Slice the chicken, peppers, and onion into thin strips.
  3. Put chicken, peppers, and onion on a large sheet pan. Drizzle with oil, sprinkle on the seasoning mix, and toss it all together.
  4. Spread the mixture into an even layer on the sheet pan.
  5. Roast for 18 to 22 minutes, stirring once halfway through.
  6. Finish with lime juice when it comes out of the oven.
  7. Serve with warmed tortillas and desired toppings.

Notes

For added flavor, serve directly from the hot sheet pan. Don’t forget to set it on a trivet!
