- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup sliced mushrooms (cremini, shiitake, or button)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Asiago cheese
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season both sides of the chicken breasts with salt, pepper, thyme, and paprika.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken breasts and sear for about 6-7 minutes on each side.
- Transfer the chicken to a plate and set aside.
- Add the sliced mushrooms to the skillet and cook for about 3-5 minutes.
- Stir in the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the grated Asiago cheese and mix until melted and combined.
- Return the chicken to the skillet and simmer in the sauce for an additional 5 minutes.
- Remove from heat and garnish with fresh chopped parsley before serving.
Notes
For a lighter version, replace heavy cream with half-and-half. For a vegetarian option, substitute chicken with sautéed tofu.
