A delicious pie that combines the flavors of chocolate, caramel, and coconut inspired by the classic Samoas Girl Scout cookies.

- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 cup sweetened shredded coconut
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- Additional toasted coconut for garnish
- Drizzle of chocolate sauce
Instructions
- Begin by preheating your oven to 350°F (175°C).
- In a large mixing bowl, combine the graham cracker crumbs, cocoa powder, sugar, and melted butter. Mix until well combined and crumbly. Press this mixture into the bottom and up the sides of a pie dish to form your crust.
- Bake the crust in the preheated oven for about 10 minutes.
- While the crust is baking, take a medium bowl and mix the sweetened shredded coconut with the caramel sauce.
- After the crust has baked, remove it from the oven and fill it with the coconut-caramel mixture. Spread it evenly.
- Sprinkle the semi-sweet chocolate chips over the top of the coconut layer.
- Return the pie to the oven and bake for an additional 15 minutes.
- Once baked, allow the pie to cool completely on a wire rack before drizzling with chocolate sauce and sprinkling with toasted coconut.
Notes
For a dairy-free option, replace butter with coconut oil. To make it gluten-free, substitute graham cracker crumbs with gluten-free options.
