  • 2 tablespoons all-purpose flour (or a gluten-free substitute)
  • 1 cup chicken broth
  • ½ cup milk (or a dairy-free alternative)
  • 4 cups mashed potatoes (store-bought or homemade)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • ½ cup grated cheese for topping (optional)
  • 1 tablespoon Worcestershire sauce or soy sauce (optional)
  • Cooked bacon bits for an extra crunch (optional)

Instructions

  1. Start by preheating your oven to 400°F (200°C).
  2. Heat the olive oil over medium heat in a large skillet.
  3. Add the chopped onions and let them soften for about 3-5 minutes.
  4. Toss in the minced garlic and sauté for an additional minute.
  5. Add the mixed vegetables to the skillet and cook for about 5 minutes.
  6. Sprinkle in the dried thyme and paprika, followed by salt and pepper.
  7. Add the shredded chicken and mix it with the vegetables.
  8. Pour in the chicken broth while stirring.
  9. Simmer for about 5 minutes until the mixture thickens slightly.
  10. Stir in the milk until everything is combined and creamy.
  11. Spread the chicken and vegetable mixture evenly in a 9×13 inch baking dish.
  12. Spread the mashed potatoes over the top.
  13. Bake in the preheated oven for about 20 minutes.
  14. Garnish with freshly chopped parsley before serving.
