Description

A delicious loaf where tart blueberries meet a creamy layer of cream cheese, perfect for breakfast or dessert.


Ingredients

  • 1 cup all-purpose flour
  • ½ cup granulated sugar (or coconut sugar)
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup unsalted butter, softened (or vegan butter)
  • 2 large eggs (or flax eggs)
  • 1 teaspoon vanilla extract
  • ½ cup cream cheese, softened
  • 1 cup fresh blueberries (or thawed, drained frozen blueberries)
  • 2 tablespoons lemon juice
  • Optional: 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Beat the softened butter and granulated sugar together until fluffy.
  3. Add the eggs one at a time, mixing thoroughly after each addition. Then, stir in the vanilla extract and lemon juice.
  4. Combine the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Incorporate this dry mixture into your wet ingredients, stirring just until absorbed.
  6. Fold in the fresh blueberries gently.
  7. Beat the cream cheese until smooth, adding sugar or lemon zest if desired.
  8. Pour half of the batter into the prepared loaf pan, dollop the cream cheese mixture on top, then pour the rest of the batter over and swirl gently.
  9. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For healthier alternatives, use whole wheat flour for extra fiber or mashed bananas instead of sugar. Store wrapped in the fridge for up to 5 days or freeze for 3 months.
