- 4 boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth (low-sodium recommended)
- Juice and zest of 1 large lemon
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Start off by seasoning your chicken breasts with salt and pepper on both sides.
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the seasoned chicken and cook for about 5-7 minutes on each side.
- Remove the chicken from the skillet and place it on a plate to rest.
- Throw in the minced garlic and sauté until fragrant, about 30 seconds.
- Pour in the chicken broth, scraping the bottom of the skillet.
- Add your heavy cream, lemon juice, and zest, stirring well.
- Return the chicken to the skillet, spooning the sauce over the top for about 2 minutes.
- Garnish with freshly chopped parsley and serve hot.
Notes
For a healthier alternative, use skinless chicken breast and opt for Greek yogurt instead of heavy cream.
