Description
A fun twist on the classic pumpkin pie, featuring crispy taco shells filled with creamy pumpkin filling and topped with whipped cream.
Ingredients
Scale
- 1 cup all-purpose flour (can substitute with gluten-free flour)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, melted (or coconut oil for dairy-free)
- 1/4 cup water
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup sugar (or maple syrup)
- 1/2 cup heavy cream (coconut cream is a great alternative)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/8 tsp cloves
- Pinch of salt
- Whipped cream (dairy or coconut-based)
- Chopped nuts (such as pecans or walnuts)
- Ground cinnamon (for dusting)
Instructions
- Start by making the taco shells. In a mixing bowl, combine the flour, cocoa powder, sugar, baking powder, and salt. Once combined, add the melted butter and water to the dry ingredients, mixing until a dough forms. If the dough feels sticky, add a touch more flour as needed.
- Divide the dough into 8 equal portions. Roll each piece into a circle about 6 inches in diameter. Preheat a skillet over medium heat, and cook each taco shell for about 1-2 minutes per side until they become firm yet pliable.
- As the taco shells cool, prepare the pumpkin filling. In another bowl, whisk together the pumpkin puree, sugar, heavy cream, vanilla extract, and spices until smooth. Make sure there are no lumps.
- Carefully spoon the pumpkin filling into each taco shell. Go ahead and be generous with the portions! Once filled, top the tacos with whipped cream and a sprinkle of chopped nuts.
- For presentation, you can dust more cinnamon over the top and serve them on a beautiful platter. Your pumpkin pie tacos are now ready to impress!
