  • 1 cup whole wheat flour or alternative flour of your choice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1¾ cups pumpkin puree (canned or homemade)
  • 1 cup granulated sugar (or coconut sugar for a healthier option)
  • ½ cup packed brown sugar
  • ½ cup vegetable oil (or applesauce for a lighter option)
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened (can use vegan cream cheese)
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin with liners.
  2. Whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a medium bowl.
  3. Combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl and mix until smooth.
  4. Fold the dry ingredients into the wet mixture, being careful not to overmix.
  5. Mix the softened cream cheese, granulated sugar, and vanilla extract in another bowl until smooth.
  6. Scoop about two tablespoons of muffin batter into each muffin cup, add a teaspoon of cream cheese mixture, then top with another tablespoon of muffin batter.
  7. Bake for 20-25 minutes, until a toothpick comes out clean.
  8. Cool the muffins in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For healthier options, substitute half of the oil with applesauce or use a sugar substitute. Can use coconut yogurt in place of cream cheese for a dairy-free option.
