- 1/2 cup vegetable oil or melted coconut oil
- 1 cup granulated sugar or brown sugar

- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.
- Combine the canned pumpkin puree, vegetable oil, and sugar in a large mixing bowl. Whisk until smooth.
- Add the eggs and vanilla extract, whisking until fully combined.
- Sift together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring gently just until incorporated.
- Fold in the chocolate chips and nuts if using.
- Scoop the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
These muffins can be made healthier by substituting all-purpose flour with whole wheat flour or using applesauce instead of oil.
