- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil (or applesauce)
- 2 large eggs
- 1/4 cup water (or milk)

- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped nuts (walnuts or pecans) or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or lightly grease it.
- Combine the pumpkin puree, granulated sugar, and brown sugar in a large mixing bowl. Stir in the vegetable oil until smooth.
- Add the eggs one at a time, making sure each is fully incorporated before adding the next. Pour in the water (or milk) and mix well.
- Whisk together the flour, baking soda, baking powder, spices, and salt in a separate bowl. Gradually add this dry mix to the wet mixture, stirring gently.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
