Ingredients
Scale
- 1 cup sugar
- 1/2 cup packed brown sugar
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup vegetable oil
- 4 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)

Instructions
- Preheat your oven to 350°F (175°C). Grab a 13×9 inch baking pan and grease it or line it with parchment paper.
- Combine the sugar, brown sugar, pumpkin puree, vegetable oil, and eggs in a large mixing bowl. Whisk until smooth and creamy.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a separate bowl.
- Gradually fold the dry mixture into the wet mixture, stirring gently until just combined. Add walnuts or chocolate chips if desired.
- Pour the batter into your prepared baking pan and spread it out evenly.
- Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the pan from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a healthier option, substitute coconut oil for vegetable oil or use a gluten-free flour blend. Top with cream cheese frosting for added flavor.
