A warm and hearty potato cheeseburger soup that combines classic cheeseburger flavors into a comforting bowl.

- 4 medium potatoes, peeled and cubed
- 1 lb ground beef (or turkey substitute)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup milk (or heavy cream)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper, to taste
- Optional: 1 teaspoon paprika or cayenne
- Toppings: Crispy bacon, chopped green onions, or extra cheese
Instructions
- Heat the butter in a large pot over medium heat. Add the diced onions and sauté until translucent, about 5 minutes.
- Add the minced garlic and ground beef (or turkey). Cook until browned and drain excess grease.
- Sprinkle in the flour and mix thoroughly. Cook for 2 minutes.
- Pour in the beef broth while stirring to combine. Add the cubed potatoes and spices. Bring to a boil and then reduce heat to simmer for 15 minutes.
- Reduce heat to low and pour in the milk. Stir in the cheeses until melted and fully incorporated. Season to taste.
- Serve hot topped with crispy bacon, green onions, or cheese if desired.
Notes
For a vegetarian version, replace ground beef with lentils or mushrooms and use vegetable broth. Serve in rustic bread bowls for a cozy touch!
