Ingredients

  • 2 cups of cooked rice (white or brown)
  • 1 pound of ground beef (or turkey or chicken)
  • 1 medium onion, chopped
  • 2–3 bell peppers (any color), diced
  • 2 cloves of garlic, minced
  • 1 can (15 ounces) of diced tomatoes (with juice)
  • 1 can (8 ounces) of tomato sauce
  • 2 teaspoons of Italian seasoning
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks for about 5-7 minutes.
  3. Once the beef is browned, add the chopped onion and diced bell peppers, sautéing until the onions are translucent and the peppers soften, about 5 minutes.
  4. Stir in the garlic, followed by the diced tomatoes, tomato sauce, cooked rice, Italian seasoning, salt, and black pepper. Mix everything thoroughly.
  5. Lower the heat and simmer for an additional 5 minutes.
  6. Pour the mixture into a greased 9×13 baking dish, spreading it out evenly.
  7. Sprinkle the shredded cheese generously over the top.
  8. Bake in the preheated oven for 20 minutes—or for an extra 5 minutes for a bubbly, golden cheese.
  9. Once baked, let it sit for 5-10 minutes before serving.
