  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white wine vinegar
  • Salt and black pepper to taste
  • 1 teaspoon paprika (plus extra for garnish)
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Start by boiling the eggs. Place the eggs in a single layer in a saucepan and cover them with cold water, ensuring the water is about an inch above the eggs. Turn on the heat to medium-high and bring the water to a rolling boil. Once boiling, cover the pot, remove it from heat, and let the eggs sit for about 10-12 minutes.
  2. After the time is up, transfer the eggs to a bowl filled with ice water to cool for about 5-10 minutes. This not only stops the cooking process but also makes peeling easier.
  3. Once cooled, gently tap each egg on the counter to crack the shell, then roll it lightly to loosen the shell. Start peeling from the wider end where there’s usually an air pocket; the shell should come off effortlessly.
  4. Cut the peeled eggs in half lengthwise. Carefully scoop out the yolks and place them in a medium bowl. Arrange the egg whites on a serving platter.
  5. To the bowl with the yolks, add mayonnaise, Dijon mustard, white wine vinegar, salt, pepper, and paprika. Using a fork, blend everything until smooth and creamy.
  6. Using a spoon or piping bag, fill the hollows of the egg whites with the yolk mixture until they are heaping. Sprinkle a touch of paprika on top for that classic look.
  7. For an added touch, chop fresh chives or parsley and sprinkle them over the top for garnish.

Notes

For healthier alternatives, consider using Greek yogurt instead of mayonnaise or adding mashed avocado.
