- 3 ripe persimmons (Hachiya recommended)
- 1 cup granulated sugar (or brown sugar for added depth)
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon (or more to taste)
- 2 cups all-purpose flour (or whole wheat flour)
- 1/2 cup chopped walnuts or pecans (optional)
- 1 cup raisins or dried cranberries (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Prepare your persimmons by slicing them open, scooping out the flesh, and mashing it until smooth.
- Combine the mashed persimmons with sugar, vegetable oil, eggs, and vanilla extract in a mixing bowl.
- Whisk together flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
- Fold the dry ingredients into the wet mixture until just combined; add nuts or dried fruit if desired.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm with butter or cream cheese, or alongside tea or coffee.
