- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup corn syrup
- 1 cup packed brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups pecans, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Blend together the softened butter, granulated sugar, and salt until creamy. Gently fold in the flour and baking powder until just combined, then press the mixture evenly into the bottom of your prepared pan.
- Prick the crust lightly with a fork and bake for 15 minutes or until golden brown.
- Whisk together the corn syrup, brown sugar, eggs, and vanilla extract in a medium bowl. Stir in the chopped pecans.
- Pour the pecan filling over the hot crust and spread it evenly. Bake for an additional 25 minutes until the filling is set and golden.
- Cool in the pan for at least 1 hour before lifting out with parchment paper, cutting into squares to serve.
Notes
For healthier options, consider using whole wheat flour or sugar alternatives. They can also be made ahead of time and stored in an airtight container.
