- 1 box yellow cake mix (or your favorite flavor)
- 2 cups fresh or canned peaches (sliced, drained if canned)
- 1 cup chopped pecans
- 1/2 cup unsalted butter (melted)
- 1 cup brown sugar (packed)
- 1 teaspoon cinnamon (optional, for extra flavor)
- 1 1/2 cups water
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with cooking spray or butter.
- Combine the sliced peaches and drained pineapple in a large mixing bowl. Add the chopped pecans and stir gently.
- Whisk together the yellow cake mix, brown sugar, and cinnamon in another bowl.
- Pour in the melted butter, water, and vanilla extract into the dry mix. Stir until just combined.
- Spread the peach and pecan mixture evenly in the baking dish. Pour the cake batter over the top without stirring.
- Bake for 35-40 minutes, or until the top is golden brown and firm to the touch.
- Cool slightly before serving to let the flavors meld.
Notes
For gluten-free, use a gluten-free cake mix. You can also substitute pecans for walnuts or almonds.
