Ingredients

  • 2 cups fresh or frozen peaches, diced
  • ½ cup granulated sugar (adjust to taste)
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 package egg roll wrappers
  • Cooking oil for frying
  • Powdered sugar for dusting (optional)
  • Vanilla ice cream (optional, for serving)

Instructions

  1. Combine diced peaches, granulated sugar, cinnamon, lemon juice, and cornstarch in a medium bowl. Stir until the mixture is sticky.
  2. Lay an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the peach mixture onto the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides. Roll it tightly and seal with water.
  4. Pour enough oil in a large skillet to cover the bottom. Fry egg rolls in batches for 2-3 minutes on each side until golden brown.
  5. Transfer fried egg rolls to a plate lined with paper towels to drain excess oil.
  6. Dust with powdered sugar before serving, and optionally serve with vanilla ice cream.

Notes

For healthier alternatives, consider using coconut sugar or honey, and whole wheat or gluten-free wrappers. These egg rolls can be baked instead of fried.
