Ingredients

  • 1 cup fresh orange juice
  • Zest of 1 orange

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts (optional)
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together your dry ingredients: flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. Combine the wet ingredients: fresh orange juice, orange zest, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in nuts or chocolate chips if desired.
  6. Line a muffin tin with paper liners and scoop the batter into each cup, filling them about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let the muffins cool in the pan for about five minutes before transferring to a wire rack.

Notes

To make lighter muffins, consider using whole wheat flour or honey as a sweetener. Muffins can be stored in an airtight container for up to a week or frozen for three months.
