- 3 tablespoons Dijon mustard
- 1 large orange (zested and juiced)
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- Lemon wedges, for serving (optional)
Instructions
- Start by preparing your marinade. In a mixing bowl, whisk together Dijon mustard, orange zest, orange juice, honey, olive oil, and thyme.
- Season your halibut fillets with salt and pepper. Place them in a shallow dish or a resealable plastic bag. Pour your prepared marinade over the fish, ensuring each fillet is generously coated. Allow it to marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Once the grill is hot, remove the halibut from the marinade, letting any excess drip off. Place the fillets on the grill, skin side down if applicable, and cook for 5-7 minutes without moving them. Then, gently flip the fillets and grill for an additional 5-7 minutes, or until the fish is opaque and flakes easily with a fork.
- Once cooked, remove the halibut from the grill and let it rest for a couple of minutes before serving.
Notes
For a vegan option, substitute the fish with eggplant slices or tofu steaks. Marinating enhances flavor; even a quick 15-minute marinade can suffice.
