- 2 cups cheese tortellini (fresh or frozen)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups fresh spinach, chopped
- 1 cup vegetable broth
- 1 cup heavy cream (or coconut cream for a lighter version)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
- Fresh basil for garnish (optional)
Instructions
- Start by heating olive oil in a large pot over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Next, toss in the diced tomatoes with their juices along with the vegetable broth. Stir to combine.
- Bring the mixture to a gentle simmer. Add cheese tortellini and cook according to package instructions, about 4-10 minutes.
- As the tortellini becomes tender, stir in the chopped spinach and allow it to wilt for about 2-3 minutes.
- Pour in the heavy cream, along with Italian seasoning, salt, and pepper. Stir gently until the sauce is smooth and creamy.
- Remove the pot from the heat. Serve hot, garnished with grated Parmesan cheese and a sprinkle of chopped basil.
Notes
For a dairy-free option, use cashew cream instead of heavy cream. For gluten-free, substitute with gluten-free tortellini.
