Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats (old-fashioned)
  • 1 cup semi-sweet chocolate chips
  • Optional: 1/2 cup chopped nuts (like walnuts or pecans)
  • Optional: 1 teaspoon cinnamon for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by greasing it lightly or lining it with parchment paper.
  2. Combine the softened butter, brown sugar, and granulated sugar in a large mixing bowl. Use an electric mixer to cream these ingredients until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract and blend completely.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually incorporate these dry ingredients into your butter-sugar mixture.
  5. Fold in the rolled oats and chocolate chips gently. If using nuts or cinnamon, add them in now.
  6. Spread the batter evenly in your prepared baking pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 25 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  8. Allow the cookie bars to cool in the pan for about 10-15 minutes before cutting them into squares.

Notes

For a healthier version, substitute half the butter with applesauce or use whole wheat flour. Cookie bars can be stored in an airtight container for up to a week or frozen for longer storage.
