Description

A delicious twist on the classic oatmeal cream pie, these bars combine chewy oatmeal cookies with a sweet, creamy filling.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups marshmallow fluff
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking dish by greasing it lightly or lining it with parchment paper.
  2. Combine rolled oats, flour, baking soda, salt, and cinnamon in a large mixing bowl, mixing until evenly distributed.
  3. Cream together the softened butter, brown sugar, and granulated sugar in a separate bowl until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, blending until fully incorporated.
  5. Stir in the oat mixture gradually until just combined.
  6. Spread half of the oatmeal mixture into the prepared baking dish, pressing it down evenly for the base.
  7. Bake the base layer for about 12-15 minutes or until lightly golden brown; cool for a few minutes.
  8. Beat the marshmallow fluff, powdered sugar, and vanilla extract in a separate bowl for the filling until smooth and fluffy.
  9. Spread the filling evenly over the cooled crust, then crumble the remaining oatmeal mixture over the top.
  10. Return the pan to the oven and bake for an additional 10-15 minutes until the top is golden and filling is set.
  11. Cool completely in the pan, then slice into squares and serve.

Notes

For dairy-free, use vegan butter and dairy-free marshmallow fluff. For gluten-free, replace all-purpose flour with gluten-free flour.
