Description

Crispy on the outside and soft on the inside, these mojo potatoes are marinated in a zesty blend of garlic, lime, and spices, perfect as a side for any meal.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • Optional: slices of red onion or bell peppers

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the baby potatoes thoroughly.
  2. In a large mixing bowl, combine olive oil, minced garlic, lime juice, chopped herbs, cumin, paprika, salt, and pepper.
  3. Cut the washed potatoes in half and add them into the mixing bowl. Toss gently.
  4. Transfer the seasoned potatoes onto a baking sheet lined with parchment paper.
  5. Roast your potatoes in the oven for about 30 to 40 minutes, tossing halfway.
  6. Once crispy, take them out and allow to cool slightly.

Notes

Consider boiling the potatoes for 10 minutes before roasting for a softer texture. Store leftovers in an airtight container for up to 3 days.
