  • 1 cup sweet corn (fresh, frozen, or canned)
  • 1 medium red onion, finely chopped
  • 1 medium bell pepper (red, yellow, or green), diced
  • 1–2 jalapeño peppers, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Optional: 1 cup diced tomatoes or cherry tomatoes, halved
  • Optional: 1/2 teaspoon garlic powder

Instructions

  1. Start by gathering all your ingredients on a spacious countertop.
  2. Clean and chop the fresh produce: dice the avocados, onions, bell peppers, and jalapeños, and chop the cilantro.
  3. If using canned corn, be sure to drain and rinse it well.
  4. In a large mixing bowl, combine the diced avocados, corn, red onion, bell pepper, jalapeño, and cilantro.
  5. Squeeze the lime juice over the mixture, then sprinkle with salt, pepper, and optionally garlic powder.
  6. Taste your salsa and adjust the seasoning as needed.
  7. Once everything is mixed and seasoned to perfection, serve immediately or chill for up to 30 minutes.
