A delightful quesadilla filled with fresh Mediterranean ingredients and gooey cheese, perfect for a quick dinner or snack.

- 4 large flour tortillas or whole wheat tortillas
- 2 cups shredded mozzarella cheese (or mozzarella and feta blend)
- 1 cup fresh spinach, roughly chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup roasted red peppers, sliced
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Olive oil or cooking spray for the cooking pan
Instructions
- Heat a non-stick skillet over medium heat. Lay out one tortilla on a clean surface. Spread half of your shredded cheese evenly over the tortilla.
- Layer on the spinach, cherry tomatoes, red onion, olives, and roasted red peppers. Sprinkle the oregano and garlic powder evenly on top.
- Add the remaining cheese on top of the veggies.
- Carefully place a second tortilla on top, applying gentle pressure.
- Drizzle some olive oil into the hot skillet or use cooking spray.
- Cook the quesadilla for about 3-4 minutes on one side, or until it’s golden and crispy.
- Flip the quesadilla over and cook for another 3-4 minutes on the other side.
- Once cooked, transfer the quesadilla to a cutting board and let it cool for a minute before slicing.
- Cut it into wedges, serve with Greek yogurt or guacamole, and enjoy!
Notes
For a gluten-free version, use corn tortillas. Add a dollop of hummus or tzatziki for extra flavor.
