Juicy chicken thighs marinated in a flavorful mix, perfect for grilling.


Ingredients

  • 2 to 2.5 pounds chicken thighs, boneless skinless or bone in skin on
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons lemon juice (or lime)
  • 1 tablespoon honey or brown sugar
  • 4 cloves garlic, minced (or 1.5 teaspoons garlic powder)
  • 2 teaspoons smoked paprika
  • 1 teaspoon black pepper
  • 1 tablespoon Dijon mustard (optional)
  • Red pepper flakes, a pinch (optional for heat)

Instructions

  1. Mix the olive oil, soy sauce, lemon juice, honey, garlic, smoked paprika, pepper, and mustard in a bowl or zip top bag.
  2. Add the chicken to the marinade, ensuring it’s well coated.
  3. Marinate in the fridge for at least 30 minutes, up to 8 hours.
  4. Preheat your grill to medium heat and clean the grates.
  5. Place the chicken thighs on the grill, cooking for around 12 to 16 minutes for boneless skinless, and 25 to 35 minutes for bone-in, flipping halfway through.
  6. Check the doneness using a meat thermometer, aiming for 165°F in the thickest part.
  7. Rest the chicken for 5 minutes before serving.
