  • 3 cups mixed greens (arugula, spinach, or your choice)
  • 1 cup cooked quinoa or brown rice
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1 avocado, sliced
  • Optional toppings: crumbled feta cheese, toasted nuts, or seeds

Instructions

  1. Begin by marinating the chicken. In a medium bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, dried thyme, salt, and pepper. Add the chicken thighs or breasts, ensuring they’re coated evenly. Cover the bowl and let marinate in the fridge for at least 15 minutes.
  2. While the chicken is marinating, cook your quinoa or brown rice following the package instructions. Once it’s ready, keep it warm.
  3. Preheat your grill or skillet over medium heat. Remove the chicken from the marinade, letting any excess drip off, then place it on the grill. Grill chicken thighs for about 5-7 minutes per side; chicken breasts will take about 6-8 minutes per side, or until the internal temperature reaches 165°F.
  4. While the chicken cooks, assemble your bowl. In a large bowl, layer the mixed greens as a base. Add a scoop of quinoa or brown rice right in the center.
  5. Once the chicken is done, allow it to rest for a few minutes before slicing it into bite-sized pieces and arranging it over your greens and grains.
  6. Finish by adding cherry tomatoes, diced red onion, and avocado slices atop the chicken. Sprinkle with crumbled feta cheese or your choice of toasted nuts or seeds for added texture.
