  • Yield: 24 cookies 1x

Description

Deliciously soft and buttery sandwich cookies filled with jam, perfect for holiday gifting and cookie swaps.

Ingredients

Scale
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup raspberry jam or your favorite jam
  • 1/4 cup powdered sugar

Instructions

  1. Cream the butter and sugar until fluffy and lighter in color.
  2. Add egg yolk and vanilla, mixing until smooth.
  3. Stir in the flour, almond flour, salt, and optional cinnamon until a soft dough forms.
  4. Chill the dough, wrapped in two discs, for at least 1 hour.
  5. Roll the dough on a floured surface to about 1/8 to 1/4 inch thickness and cut shapes.
  6. Bake on a lined baking sheet until edges are barely golden, about 10-12 minutes.
  7. Cool the cookies completely on a rack.
  8. Dust the tops with powdered sugar, then spread jam on the bottoms and sandwich them together.

Notes

For best results, chill the cut cookies before baking. Use a thick jam to prevent messy sandwiches.
